Oatmeal Cookies

Oatmeal cookies are a staple for every cookie jar! Here is a healthful version of an old fashioned favourite.
Source: The New Book of Whole Grains Ingredients (Use organic where possible) 1 tsp baking soda 1 cup combined raisins and chopped nuts 2 eggs, slightly beaten 1 cup melted butter 2 cups Organic Oat Flakes 1 cup Organic Oat Flour 1 cup sugar, organic or brown 1/2 tsp sea salt (or salt) 1 tsp vanilla 1 1/2 cups Organic Whole Wheat Cake & Pastry Flour Directions Pre-heat oven to 375F.
Stir dry ingredients breaking apart any lumps in the baking soda.
Add eggs, butter and vanilla; beat until smooth and creamy.
Stir in the oats, raisins and nuts. Drop by teaspoonful onto a greased cookie sheet. Bake for 15-20 minutes or until browned.
Makes 3-4 dozen
