Ginger Snaps

Rediscover a traditional favourite with a bit of a bite! Ginger snaps take a little extra time to make, but the results are well worth it. These cookies age nicely and have a long shelf life. A great comfort food whatever the weather, ginger snaps make a great gift. Ingredients (Use organic where possible) 1 tsp baking soda 1 cup dark molasses 1 tsp ginger 3 1/2 cups Organic Hard Unbleached Flour 1/2 cup shortening 1/4 cup sugar 1/4 tsp sea salt (or salt)
1/4 cup water Directions Combine molasses, sugar, and water and cook together slowly for 15 minutes. Just before removing from heat, add shortening and ginger. Stir until shortening is melted. Cool mixture and add soda, salt, and flour which have been sifted together for light consistency. Mix ingredients thoroughly. The dough should be very stiff. Chill the dough in the refrigerator for several hours. Turn out dough in a lightly floured board and roll as thin as possible. Cut with a round or heart shaped cookie cutter and place 1/2 inch apart on a greased cookie sheet
