Corn Banana Oat Muffins

A wholesome banana muffin with an added twist, this is an irresistible snack that will quickly become a family favourite. Ingredients (Use organic where possible) This wholesome dish combines two great sources of chromium, which makes it a perfect choice for individuals who have diabetes or hypoglycaemia. 1 tsp baking soda 1/4 cup Organic Cornmeal 2 eggs (beaten) 1/2 cup honey 1 cup mashed ripe bananas 1/2 cup melted butter or oil 1/2 cup Organic Oat Flakes 1/4 tsp sea salt 1 1/4 cup Organic Unbleached Cake & Pastry Flour Directions Preheat oven to 350F. Lightly oil muffin tins or line with paper cups. Combine all wet ingredients together in a measuring cup. Beat the eggs then add the wet ingredients. Combine all dry ingredients and add them to the mixture alternating with the banana until they are well mixed. Pour the batter into the muffin tins. Bake for 10-25 minutes until tops are browned. Remove and let cool. Makes about 12 muffins.
