Barley Pilaf

Here is a healthful side dish that is perfect for family meals or for potlucks. Pot barley is a great choice and it is higher in fibre than pearled barley. This recipe calls for a rice steamer. Ingredients 1/2 cup organic brown rice 1 cup chicken or vegetable broth 1 tbsp dried onion 1 tbsp dried parsley 1/2 tsp pepper 1/2 cup Organic Pot Barley 1 cup water Directions
In the morning add water and grains to the bowl of a rice steamer and let the grains soak until the evening. Use a strainer to drain water and place in steamer bowl again. Add water to reservoir and turn on the steamer. Add the remaining ingredients to the bowl and steam for 50-60 minutes or until desired tenderness is achieved. Serves 4
